About this place
Lift a bundle of noodles from the clear kelp water, and taste them first plain, or with a dash of Setouchi seaweed salt from the counter. The direct aroma of wheat and the mellow umami of the kelp broth emerge immediately, letting you appreciate the noodles on their own before they ever reach the dipping broth.
Tucked into a side street in Yoyogi 2-chome, Inose Tsukemen builds its concept around this kelp-water style. The standard konbu water tsukemen offers 200 g and 300 g portions at the same price, delivering generous heaps of glossy, broth-slicked noodles paired with a seafood-rich paitan dipping soup.
For a broader progression of flavors, the Tokujo Konbu Water Tsukemen makes an enticing choice. Alongside the primary seafood dipping broth, three other distinct dipping soups—Tokyo Classic, chilled soy milk tantan, and grated daikon with nameko mushrooms—arrive together for a four-bowl spread that brings new character to every bite. Plump shrimp wontons, seasoned eggs, and extra chashu pork allow diners to tailor each bowl to their liking.
Operating across lunch and dinner shifts, the shop has a calm, counter-centered interior that welcomes solo guests. It offers an engaging dining pace centered on layered dashi and an evolving cast of dipping broths.
